Study of the application of barley as brewing adjunct for production of 10 % light beer.Peer-reviewed article

The complex appraisal of results of physico-chemical and sensorical analysis of the worts and beers from 1/4 pilot plant 10 % light brews has revealed that the single decoction process (lasting 194 min) can replace a two-mash process (lasting 265 min). Czech normally modified and over-modified malts were suitable for 30 % barley treatment without application of microbial enzymes. No exprecive changes in physico-chemical and sensorical proprietes of beers have been observed.(In Czech, English summary only)
