Decreasing of sludge content by hot wort flotation in whirpool-tank.Peer-reviewed article

The series of measuring proved, that using hot wort flotation by carbon dioxide is possible to decrease the content of fine sludge, depending on the quality of boiled wort, by 50% of original contents. Efficiency of flotation increases for worts brewed from the malts of less quality. If the quality of malt is stabilized, it is possible to obtain the fine sludge content of 10% wort 65-85 mg/l even in older machinery (lauter tun ZVU from 1967). It makes possible to fill CKT up to 86% without antifoam agent addition.
