The article deals with the theoretical fundamentals of malt drying. Equations are derived calculating factors determining the evaporation rates and the efficiency of the process under stabilized conditions. The importance of sorption isotherms and their correct determination is explained in detail. The method of calculating the drying process curve is briefly outlined in the closing paragraphs.
