The article describes various stabilizing substances employed abroad to improve storing properties of beer and the results of large-scale experiments carried out with beer from two known breweries. A foreign preparation Stabifix was applied at experiments, and the reduction of high-molecular nitrogenous substances in the beer taken as a criterion of efficiency. It has been found, that Stabifix is more efficient if introduced into beer in the stage of filtering through diatomite filters of Enyinger-Union type than if added into storing tanks. Ascorbic acid added into beer processed with Stabifix has a favourable effect upon its organoleptic properties, as also upon the general colloidal state of beer.
