Barley heated with pressure steam was used in pilot brewing without previous malting and the results confirm that the method has many advantages over all other processes replacing malting. The required installation is simple and inexpensive, the technology is not connected with any difficulties. Taking into account the present situation in malting it can be recommended to replace malt with steamed barley up to 15 % of total amount of malt required by standard technology.
