Technical and technological problems of gas firing in brewhouses.Peer-reviewed article

The PRAZDROJ brewery at Plzeň is at present experimenting with gas fired coppers. Gas burners have been installed in one brewhouse without changing the furnaces of the coopers in question or their lining. The burners produce long, swirling flame. Papers presented recently at the seminar on modern brewing methods held at Plzeň evaluace advantages and disadvantages of straight firing and quote conclusions of several authors who have studied the problem.
