The authoress compares various opinions on the question of malt surrogates and their application in brewing industry, as published in technical journals abroad. She outlines specific features of mashing technology which must be taken into account when surrogates and enzymatic preparations with alpha-amylolytic, proteolytic and cytolytic effects are used. Technology developed for preparing barley extracts and syrups is described in detail. Despite serious attention which is being paid to the problem of surrogates, many important questions are still open.
