The article deals with the relation between the biologic stability of beer, sanitary-bacteriological condition of machines and equipment in bottleries and efficiency of filtering plants. The following testing methods can be recommended as giving accurate results: determination of the total number of yeast microbes, determination of wild yeast by growing in culture medium containing iodoacetic acid, determination of wild yeast by growing in medium with crystal violet and determination of lactobacilli and pediococci by growing them in two media modified as suggested by Nakagawa.
