Application of gas chromatography for the determination of volatile substances present in beer.Peer-reviewed article

The authors outline a new gas chromatography method, which has been developed for the determination of volatile substances present in beer. Preparatory operations preceding main analyses consists of distillation by water steam and extraction of distillate by pentane - ethyl ether mixture (in 1:2 proportion). Analyses which have been carried out covered alcohols, esters and fatty acids and have show in the investigated samples the following concentration ranges: alcohols 66.4-125.6 mg/l; esters 13.1-43.4 mg/l; fatty acids 28.6-83.2mg/l.
