Interrelation of quality indices of barley and malt.Peer-reviewed article

In 1977 fifteen varieties of barley grown on four different plots after two different forecrops were analyzed to study interrelation of quality indices of barley and malt. It has been found that the viscosity of barley extract has no relation to malting properties of barley and malt quality. Wettability is an important factor and should be determined. Modification degree of malt is - with a reasonable accuracy - indicate by the viscosity of congress wort. Estimation of expected atenuation degree can be based on the amount for fermentable substances and modification degree. The article deals also with the effects genetic factors (variety) and non-genetic ones (foredrop, soil conditions etc.) have upon the quality indices of malt.
