A new antifoam agent Depenol 611 was developed in Czechoslovakia for the use in baker's yeast production. At first, the efficiency and properties of Depenol were tested in laboratory. The results obtained from the full-scale experiments performed during the production of baker's yeast are given. Depenol was compared with Kontramin 210 which is commercially used with concentrated molasses media at present in Czechoslovak yeast factories. Some qualitative properties and the results of the tests regarding its hygienic and toxicological undefectivity are mentioned. For a rapid estimation of the antifoam efficiency a modified method of Morse-Moss is proposed. A principle of this method is described.
