The formation of nitrites in contaminated yeast inoculum keeping under water was observed. The rate of the nitrite formation was dependent on a quantity of bacteria, temperature and a concentration of nitrates in water. In presence of yeasts, nitrites were degraded. A simple test for detection of bacteria reducing N03 in a yeast inoculum is described. The principles for an achievement of the lowest level of nitrites in a yeast inoculum are given.
