Polish experiences from production of malt extract using ethanol.Peer-reviewed article

The method for a production of extract of malt extract using ethanol was developed in Research Institute of Fermentation Industry. This malt extract was used in a range of 30 to 50 % instead of malt during eight years in industry. The Council of Brewery Industry Association gave an agreement with a build up of the new plant for malt extract production. The described method of the extraction of malt can initiated the production of isomerized extracts. The extract produced by the help of ethanol both in nonisomerized and isomerized forms should be beyond and hygienic objection. The production of malt extract using ethanol was accepted in other European countries in a few last years, too.
