The baker's yeast strain S. cerevisiae KBD was selected during the six-stage cultivation under conditions of an industrial yeast production. The selection was performed from the final product (pressed yeast). The isolated strain D7 has the following different in comparison to the parent strain: the cells are larger, higher biomass yield, the content of ergosterol in the cell dry weight is higher, the fraction of ergosterol in the steroid mixture is higher. Using the strain D7 a higher theoretical yield from the fermentation volume by 27% in comparison with the parent strain was achieved under conditions of industrial fermentations.
