Fractionation of yeast biomass II. Release of cytoplazmatic content of baker's yeast cells.Peer-reviewed article

An optimization of the degradation of yeast cell walls using self lytic system of the yeasts with the aim to the yeast fractionation was developed. Autolysis in 10 % suspension of the baker's yeast, initiated with the addition of previous autolysate, is finished in 24 h under conditions of mixing and the temperature of50 °C. The process can be intensified by the addition of ethanol and NaCl. Under these conditions the minimum of 70 % of proteins is released from the yeast cells in 24 h.
