Application of isolatachophoresis for the determination of compounds binding sulphur dioxide in wine.Peer-reviewed article

The application of isotachphoresis for the determination of acetaldehyde, pyruvic acid and 2-oxoglutaric acid in wine is described. These compounds react with sulphur dioxide. The fixed SO2 is no more active. The method is quick, accurate enough and permits the evaluation of the formation of SO2-inactive compounds in production plants.
