The article deals with questions of acid washing of brewer's yeast. An influence of mentioned method of acid washing with an elimination of a bacterial contamination of yeast and their ability of a successive adaptation to lower pH by a repeated acid washing was confirmed. The mentioned method of the acid washing was tested at working scale with positive results.
