Sedimentative and turbidimetric assessment of yeast concentration.Peer-reviewed article

Pitching yeast concentration is assessed by standard centrifugation of yeast for 10 min    (3000 r.p.m) in flat-bottomed glass cells. Relative yeast concentration is expressed as sediment volume fraction on sample total volume, read after centrifugation. For turbidimetric yeast assessment, 0,4 ml of 20% NaOH was added to 4 ml sample containing fermented hopped wort, fermenting or secondary fermented beer; after stirring-up an absorbance value was measured at 800 nm. NaOH activity effects sludge dissolution contained in hopped wort and beer.
