The Influence of Ethanol and Temperature on Yeast Growth.Peer-reviewed article

Changes of growth rate of 18 Saccharomyces cerevisiae yeast strains after extracellular ethanol addition and after fermentation under increased temperature respectively were studied. Combined effect of ethanol (6 % v/v) and temperature (35 °C) resulted in 60 % decrease of biomass acquisition. On the other hand, ethanol only in concentration 6-9 % v/v at 28 °C stimulated yeast growth rate. Small increase of temperature (from 28 °C to 33-35 °C) in earlier growth phases positively affected growth rate and ethanol production.
