We studied the use of various chemicals and namely some antibiotics as additives during yeast washing. The effects of these substances were tested on cultural and wide yeasts and bacteria occurring as an infectious microflora of brewers’ yeasts. We showed principal advantages of antibiotics, namely chlortetracycline (CTC), which besides efficient inhibition of infectious bacteria has also stimulation effects on yeast fermentation capacities. This study presents results of the determination of losses of spirit in two plants using the continual method and reversible separation method of yeasts. The method for the collection of samples was worked out, for example at variously occupied shifts or for following certain values during all three shifts and analytical method for the selection of suitable and operationally simple method for the alcohol content determination. The results show a remarkable difference in deaeration loss, which is 0.001 % versus the published value of 0.2 %. During the deaeration about 80 m3 of gas is produced in 24 hours.
