The article describes various stabilizing substances employed abroad to improve storing properties of beer and the results of large-scale experiments carried out with beer from two known breweries. A foreign preparation Stabifix was applied at experiments, and the reduction of high-molecular nitrogenous substances in the beer taken as a criterion of efficiency. It has been found, that Stabifix is more efficient if introduced into beer in the stage of filtering through diatomite filters of Enyinger-Union type than if added into storing tanks. The article deals with several out-standing problems of yeast industry, as efficient measures for securing best strains and cultures of yeast, shortening and simplification of the propagation stage of fermentation, gradual change over from batch production to continuous methods, application of automation etc. There are promising outlooks in the development of new technology based on employing only two raw materials, viz. phosphoric acid and ammonia water.
