The article deals with the design, functions and specific features of a laboratory, fully automatic malting line, developed at the Research Institute of Grain Crops for testing and classifying brewing barley. The technology applied to tests and an extreme accuracy of all the functions of the plant secure minimum deviations of data obtained at tests from actual ones. All the criteria applied to specify the quality of malt can be correctly ascertained. The article deals with special instruments and apparatus which have been developed to ascertain the foam generating capacity of some organic acids and alcohols. Effects the mentioned substances have upon the fermentation process with substrate stirred by shaking was studied, too. It has been found that addition of lactic acid or ethylalcohol improve the proportion of dry matter and is therefore desirable. These chemicals contribute to better dispersion of air during fermentation processes.(In Czech, English summary only)
