The author presents some results of his research work on basic economical problems of breweing industry and indicates, what factors must be taken into account to determine the optimum capacity of a brewery. A new method has been developed permitting to determine the purity of the citric acid solutions prior to crystallization. The analysis takes only a fraction of an hour and can be applied to solutions containing no soluble ash matters.(In Czech, English summary only)
