The article summarizes present findings in the scope of beer  pasteurization with special emphasis on the risks of  inaccuracies related with the use of the variable of  "pasteurization unit" (PU). German factory ZIEMANN has developed a new equipment- vacuum wort boiling plant - for wort boiling  with the goal to reduce a primary energy  and to increase a content of coagulable nitrogen (cN) and  thiobarbituric acid figure (TBAF). This equipment  consists of flash evaporator, vapour condensator, vacuum pump, this plant is connected via By - Pass with wort pipe line. Obtained results at the rate of evaporated water 4 - 5 % and  vacuum 0,06MPa (abs.) showed appr. 50 % primary energy saving, further increased  foam stability, and improved wort composition (cN content, TBAF, and the other parameter).
