In this article a review of knowledge about the mechanism of fermentation of oligosaccharides, accompanied by particular citations, is given. According to the author9s investigation it was found, that the fermentation of oligosaccharides takes place in yeast with prevailing anaerobic metabolism. The indirect fermentation may be considered as a help in such cases, where the unsatisfactory ability of fermentation is substituted by an oxidative process. The unsatisfactory nutrition with the materials containing nitrogen may also cause the transformation of metabolism into oxidative phosphorylation.(In Slovak, English summary only)

The article is a continuation of former report (Kvasný průmysl 2, 225) treating the theoretical dependences occuring in spirit raffination, which are derived from fundamental physico-chemical data. According to the general formulas it is possible to calculate the raffination parameters for devices of common use. Several diagrams and schemes concerning the above mentioned dependences are added.(In Czech, English summary only)

For differential diagnosis the antibiotic Actidion (cycloheximide) was used by the authors. This antibiotic is used in Versuchsanstalt für Gärungsgewerbe inVienna. It has inhibitive influence upon the growth of yeast. The authors elaborated a method of control in two ways of application, according to which the quantitative determination of bacterial infection by direct reckoning, as well as the qualitative classification basing on the results of elective cultivation, are possible. For both methods the Thom9s camera is used. The negative degree of bacterial contamination is expressed as infection index. The above mentioned methods are particularly described.(In...
