    Adhering to the Harris classification system of polyphenols present in hops the author describes their chemical and physical properties and evaluates the importance of some of them for brewing industry. He underlines also specific features of hops from the Žatec region. The composition of polyphenols in the Žatec hops differs from that of foreign varieties.(In Czech, English summary only)

    The article deals with a new method which has been elaborated for calculating the content of active matters in hops, i. e. all resins generally and ʋ - bitter hop resins particularly. During prolonged storage the proportion between various components is gradaually changed. It can be stabilized either by making hop extract or by milling hops and subsequent packing. For good and uniform bitter taste of beer hop extract should be combined with processed hops.(In Czech, English summary only)
