The article deals with the results of tests which have been carried out to typify 35 strains of brewer's yeast from the collection of the research Institute of Brewing and Malting. The authors have ascertained that the regression equitation derived by various research workers and recommended for the determination of total nitrogen content in wort by means of spectrophotometric methods cannot be applied to the Kjeldahle method in laboratories using the ZEISS VSU P spectrophotometers. They have derived for the said spectrophotometer a new regression line the reliability and accuracy of which confirm the result of comprehensive direct spectrophotometric method to determine the content of nitrogen in green malt cold extract and to evaluate thus its quality.(In Czech, English summary only)
