Potato tuber water is a suitable nutrient medium for fermentation of molasses and starch waste. Nitrogenous organic compounds and minerals contained in water tuber accelerate fermentation of molasses mash and help deeper fermentation of starchy mashes. This knowledge can be used at combined starch-spirit production where current weak mashes could be enriched with sugar in molasses or concentrated waste starch, starch sludge, or wheat starch. This combination would substantially improve thermal economy of the combined production as instead of spirit content of mature mashes of 3-4 vol.%, the alcohol content of 6-8 vol.% in the mash could be also achieved in mash before distillation at two-day fermentation.
