The article deals with several out-standing problems of yeast industry, as efficient measures for securing best strains and cultures of yeast, shortening and simplification of the propagation stage of fermentation, gradual change over from batch production to continuous methods, application of automation etc. There are promising outlooks in the development of new technology based on employing only two raw materials, viz. phosphoric acid and ammonia water. Waste water are then free of SO4´´ ions. The decribed technology is covered by a Czechoslovak patent. The closing paragraphs of the article deal with several ventilating systems and compare their efficiency as to the ratio of air utilisation.(In Slovak, English summary only)
