Silica gel made in Czechoslovakia by development laboratories at Michalovce, belonging to Keramické závody N.C., can be used with good results for stabilizing filtration of beer, since it has very satisfactory filtering and stabilizing properties. The authors evaluate the results of a special treatment in which homogeneous, aqueous suspension of proteolytic enzyme and silica gel were used in certain doses to influence filtration through diatomaceous earth filters. Filtration layer consisting of the mentioned components served for stabilizing filtration in which a mixture of various sorts of diatomaceous earth was used in due proportion. The method is very efficient permitting to utilize best proteolytic enzyme and silica gel. The described filtration of prestabilized beer [in the first stages of the brewing process] contributes to good taste of beer and both colloidal and organoleptic stability.
