The article deals with the relation of flocculation to the contents of mannan and glucan in the walls of cells of Saccharomycec carlsbergensis yeast used in continuous brewing process. The results of research works confirm that there is a relation between the mannan percentage and flocculation properties. No firm relation could be traced for glucan, but mannan to glucan pro portion increases with the decreasing flocculation properties of yeast. The absolute values of mannan to glucan proportion were 2,7 - 4,0 yeast grown under aerobic conditions and 1,5 -1,9 inyeast grown under anaerobic condition. The figures for periodic fermentation are 1,5 - 1,8.
