Experimental work is focused on a determination of intracellular proteases in yeasts. An extract of brewing yeast of isolated at first. This extract was divided into proteolytic fractions by gel ion-exchange chromatography. The proteolytic fractions were used for the immunization of rabbits. The antiserums obtained were used for a distinction of antigens in the fractions of yeast autolysate and for a determination of intracellular antigenes of yeasts in beer. Immunochemical methods such as immunoelectrophoresis, two- dimensional immunoelectrophoresis, double diffusion, and single radial diffusion for the distinction of antigens were applied. At the end, one example is discussed: The beer without enzymatic stabilization showed the proteolytic activity despite of the negative immunochemical determination. The results proved that the presence of yeast proteases in beer is not usual.
