Pectinase complexes of commercial preparations Pectinex Ultra (Schweizerische Ferment AG, Basel) and Leozym (Slovlik, n. p., Leopoldov, Czechoslovakia) containing endopolygalacturonase, exopolygalacturonase, pectin, lyase, and pectinesterase were irreversibly immobilized by adsorption on polyethyleneterephthalate - orsilen )Silona, n. p. Planá nad Lužnicí, Czechoslovakia) in0.1 Macetate buffer, pH 4.2. The immobilization resulted in a lowering of pectinolytic activity; the measure of the lowering depended on the amount of the enzyme fixed on the carrier. The highest relative pectinolytic activity (28.1 % Pectinex Ultra, 18 % Leozym) had the preparations containing8 gpectinase per1 kgcarrier. The immobilized preparations were stable during a long-lasting storage at 4 °C, were characteristic of their fixation strength in salt solutions of various ionic strength, pH 3.6 - 6.0 as well as in solutions containing pectic substances, in fruit juice and white wine and they showed high operational stability enabling longterm continuous use.
