Two models of beer foam decoposition.Peer-reviewed article

J. ŠAVEL

Two models of the beer foam decomposition are described in the article. The first classic model describes a change to foam A to beer C according to the equation . The second extended model uses the assumption that foam A is converted to beer B. Beer B is freely presented in foam at then drops down below the foam like the beer C ( ). The kinetic solutions of both the models are described. The experiments confirmed the validity of the extended model while the classical model described only a part of the decomposition curve of the foam. The significance of the extended model of the beer foam decomposition for a measurement of the foam stability is discussed.
