Yield in yeast factories.Peer-reviewed article

Calculation of yield in yeast factories and distilleries based on the content of polarization saccharides in molasses is not sufficient. Besides molasses, the yield is also affected by other organic substances contained in molasses (e.g. other saccharides, amino acids) affecting yeast growth and development and thus yeast material formation.
