On the possibility of increasing the yield of alcohol in distilleries treating molasses.Peer-reviewed article

The increase of yield in distilleries has been the basis of numerous studies recently. The authors solve this issue in terms of use of melibiose, which remains after partial splitting of raffinose trisaccharide present in molasses. The splitting of melibiose (galactose, glucose) is carried out with autolysate prepared from brewery yeasts.
