The yeast return in the distilleries.Peer-reviewed article

The authors evaluated critically the centrifugal separation of yeast during the production of spirit according to Boinot. Basing on their own experinces the authors suggest an arrangement of technological processes with centrifuging in the final stage of fermentation. The causes of failing fermentation are described. For the case of strong contamination combined with agglutination the authors suggest to use double separation after foregoing liberation of the groups by means of acidification to pH 3,5. One of the causes of decay of yeast in acid medium, due to unsuitable pH value during the mean fermentation process is described.
