The article contains principal information about the new construction of malt kiln with two fences according to M. Růžička, using the natural draught. It is supplied with indirect combined heating by means of flue gas and low pressure steam. Instead of the commonly used fire place there is Roučka9s vertical boiler and air stove supplied with pile shaped air heater with large heating surface offering minimal resistance to the flow air. The author discusses the influence causing indistinct results in the difference between the amount of extract determined by means of analysis of malt and the amount of extract gained in the brewhouse, as calculated from the volume and concentration of produced wort. The author has studied the qualitative and quantitative losses of extractive matter in the sewage water of a brewery with the capacity of 300 000 hl beer per year. He draws special attention to these points: 1. The unavoidable pollution of sewage waters caused by the losses of extract, can be reduced, but not quite avoided. 2. The losses in the running. 3. The authors evaluated critically the centrifugal separation of yeast during the production of spirit according to Boinot. Basing on their own experinces the authors suggest an arrangement of technological processes with centrifuging in the final stage of fermentation. The causes of failing fermentation are described. For the case of strong contamination combined with agglutination the authors suggest to use double separation after foregoing liberation of the groups by means of acidification to pH 3,5. The author refers the results of final commercial tests made with the Gregor9s raffination device (ČSP No. 83086). A scheme of the device as well as the description of its work are added. The results of tests are arranged in 3 tables.
