The study describes a method which can be used for the determination of the actual content of saccharose and raffinose in sugar beet molasses. For hydrolysis, enzymatic preparations are produced by a simple procedure from baker’s yeasts and brewer’s yeasts of the bottom fermentation. Hydrolysis takes approximately for 16 hours (over night). The difference between the results of parallel determinations must not exceed 0.3 %. Saccharose and raffinose contents are necessary for the calculation of fermentable sugar. Application of the described method allows to acquire a more accurate basis for the determination of ethanol yield from various molasses compared to the previously used methods.
