Methods of determining the quantity of dissolved oxygen in fermenting substances.Peer-reviewed article

Three methods of sulphite oxydation: Kočergov's, Winkler's and polarographic have been tested. The results underline the superiority of polarographic method. The tests with fermenting substance were aimed at determining the instantaneous and maximum concentration of dissolved oxygen during fermentation. Decrease of oxygen in the yeast suspension has been studied.
