Application of gibberellines in malting and brewing industries.Peer-reviewed article

Having briefly described the history of gibberellines the authors analyse the results achieved with application of the A-gibberelline in malting plants and breweries. The authors state, that the best concentration for speeding up germination of barley is 0,2g of A-gibberelline per !kg barley. The effect of gibberelline can be further improved if it is used in mixture with glucose (0,01 mg/% of A-gibberelline + 0,01% of glukose). The solution was applied as a spray on the normally steeped barley in young piece stage. The spraying rate was20 lof solution per 100q of barley. Glucose was used for another series of experiments alone in the form of 0,01% solution the rate being 0,2 mg of glucose per1 kgof barley. Experiments are being made to study the influence of A-gebberelline in combination with auxine and 1-tryptophane. In concentrations ranging from 10 mg to 0,,1 g of A-gibberelline per 100 ml of wort no effect upon yeast was disclosed. Neither the fermenting rate, nor the morphologic or physiologic condition of yeast was effected. No changes were observed in decomposition of sugar. Further research works will be concentrated upon tracing the influence of A-gibberelline on amino acids, tanning matter and composition of albumins. Behaviour of malt sprayed with gibberelline solution is being studied in installations for continuous as well as cask fermentation.
