Determining the brittleness of malt and its uniformity.Peer-reviewed article

To determine the brittleness of malt and its resistance against crushing an instrument designed for testing grain kernels has been adapted. The tester, manufactured by CHIRANA N. C., measures the force, which is required to cut crosswise a grain kernel. This force reflects the brittleness of tested grains. The mean square deviation is taken as a criterion of uniformity, indicating the homogeneity of malt. Values obtained in large-scale tests confirm, that the instrument is suitable for analyses of malt. The results are in an established relation to the results obtained by comparing extracts from fine and rough crushed malt. There is also an interrelation to the Kolbach numbers. No firm relation could be found to  the results of mechanical tests.
