The results of laboratory analyses indicate, that the bitter taste of beer is caused mainly by soft resins. Hard resins participate more significantly only in hops used after a long storing. It has been confirmed that for fresh hops the proportions of £+β/3. After a prolonged storing the effect of β - components is more pronounced.
