The majority of technical strains of wine yeasts cultivated at the Research Institute of Viticulture and Wine Industry are pure cultures and are used as such by industry. They belong chiefly to the following stems: S. vini, S. oviformis. Several strains were identified as S. carlbergensis, S. heterogenicus, S. globosus, and S. chevalieri. The article deals with the principal morphological and physiological properties of the stems and outlines the range, in which each of the described species can be employed.
