A special laboratory set for continuous decoction mashing has been developed and installed to study the extent to what starch containing surrogates, especially crushed barley, can be used instead of normal material. The results of experiments with various proportions of surrogate are presented in the form of tables and diagrams. No technical or technological problems arise at continuous decoction mashing with surrogate proportions as high as 40 %.
