In the Kolín yeast plant the consumption of antifoam fat has been reduced by 65 % after an automatic defoaming plant has been installed and put into operation. Conventional defoaming fat is used as an antifoam agent and is applied in the form of 1:1 alcohol solution. Beside saving costs and material the new plant simplifies handling operations with fat, improves oxygen transfer during fermentation and contributes to better colour, taste, flavor and compressibility of yeast.
