Adhering to the Harris classification system of polyphenols present in hops the author describes their chemical and physical properties and evaluates the importance of some of them for brewing industry. He underlines also specific features of hops from the ®atec region. The composition of polyphenols in the ®atec hops differs from that of foreign varieties.
