The author outlines modern views on the chemism of processes resulting in the formation of polymer forms of polyphenol matters used by brewing industry, i. e. essentially of the chemism of tanning matters present in hops. Polyphenol components of hops and malt are important factor of brewing technology, since they determine to a certain degree physical, chemical and organoleptic properties of beer. Specific properties of Czech beer are at this juncture discussed in detail.
