Brewing quality of hops of 1971 harvest.Peer-reviewed article

M. VANČURA

If the percentage of all kinds of resins is taken as a grading criterion, the quality of hops of 1971 harvest can be classified as very satisfactory. It is practically the same as in 1970. The series of tests which have been carried out conform that - owing to somewhat higher percentage of bitter acids - the amount of hops required for hopping can be reduced / as compared with present rates - by  roughly 5%. This reduction is practical only in breweries using fresh hops. As frech should be considered hops resins does not exceed 15% [of the total amount of resins].
