The authors calculate theoretic concentration of ethanol in a gaseous phase relating it to the ethanol percentage in a liquid phase. The study covers systems in which water solution of ethanol is intensively aerated and equilibrium exists between components, i.e. ethanol-water-air. Ethanol concentration in gaseous phase is calculated for wide range of its concentration in water, i.e. from 0,1 to 25%. The results are related to various states of the solution as well as to the intensity of aeration, i.e. the air flow rate through the fermenter. Application of the derived formulae is show in a number of examples.
